Vineyard terroir: Casablanca
14 day fermentation at 12°C - 15°C in stainless steel, 10% in French oak.
5 month ageing, 90% in stainless steel tanks, 10% in French oak.
Gentle filtration to maintain as much natural character as possible.
Eye: Bright, youthful pale straw colour.
Nose: Exuberant but elegant aromas of lime, white peach and melon.
Palate: Crisp, fresh acidity, underlying a rich palate bursting with citrus and green apple fruit.
Enjoy it as an aperitif or with Caesar salad, grilled fish, seafood or goat cheese.
The vintage 2011 was exceptionnaly cool with belated cold and long spring which generated a very late harvest season: 2 to 3 years later than usual. The cold spring generated low yields but at the same time it granted a very high aromatic and phenolic concentration as well as a very good acidity level with slightly lower alcohol percentages than usual. A very well balanced and elegant vintage.
