Cold fermentation in stainless steel tanks: 14 days at 14°C. No malolactic fermentation to keep lively freshness.
Ageing in stainless steel tanks.
Sterile filtration to ensure a safe and long ageing potential, and bottled under vacuum
for maximum protection. All bottling was performed on the Estate using L'Avenir's
state-of-the-art bottling line, in accordance with strict quality control procedures.
Eye: Pale lemon colour.
Nose: Sweet tropical fruit with a hint of ripe pear and pineapple.
Palate: Crisp, fruity and rich.
Enjoy it as an aperitif or with seabass carpaccio with watercress, tofu-based chinese dishes with ginger and coriander or oysters.
