Not far from the village of Caussiniojouls, at the heart of the Faugères appellation, the Domaine de Fenouillet was bought by Jeanjean in 1993. Since then, we have constantly sought to get the very best out of the schist land and the steep slopes so characterisic of the best of this terroir so as to produce rich, powerful wines.
Night machine harvesting so as to preserve the aromatic freshness of the grapes. Destemming and pressing under inert gas. Cold static settling keeping only the fine lees. Fermentation around 15°C in stainless steel tanks, except for a part of the grapes (20%) vinified in new 500 litres French oak barrels.
3 months on fine lees, in stainless steel tanks or in barrels with weekly stirring of the lees. Fermenting in barrels gives the wine complexity and length while keeping fruity and floral aromas.
Eye: Yellow colour with golden tints.
Nose: Intense nose with white flower, pear and spices aromas.
Palate: Well balanced with a fresh and long fruity finish.
Best served chilled for the aperitif or with a veal blanquette, scallops or a hard cheese. To be tasted right now or within 3 years.
The highest schist hillsides of the Faugères appellation, benefiting from fresh nights. The altitude is high for the region (300 m), allowing a slow and regular ripening of the grapes. The soil structure and composition bring about naturally low yields and wines with a rare elegance. Warm and dry Mediterranean climate, tempered by the altitude.
