Languedoc AOP

The true spirit of Languedoc wine, it expresses the raw character of the stony limestone terroir, its arid soils and the ever present sun. Concentrated, densely coloured and powerful with well melted tannins, it’s absolutely ‘the’ wine to drink with Mediterranean dishes.


Machine harvesting. Destemming. Cold pre-fermenting maceration. Fermentation in stainless steel tanks (25-28°C) with daily pumping over (1 to 4 per day) and 1 or 2 rack and returns. Long maceration for optimal extraction. Malolactic fermentation in stainless steel tanks.


12 months in French oak barrels (¼ new, ¼ 1 year old, ¼ 2 years old and ¼ 3 years old).

Tasting Notes

Eye: Deep garnet colour.

Nose: Complex nose with black fruit and cocoa notes.

Palate: Spicy and silky with a smooth vanilla finish.

Food Pairings

To be tasted at 16-17°C with a grilled rib steak, a game stew or matured cheese. Can be laid down for up to 8-10 years.

Soil Types

Jurassic limestone soil from the sea on the Aumelas plateau. Warm and dry Mediterranean climate, tempered by the altitude.
