Aperitif and dessert wines with strong personality, our natural sweet wines embody the true know-how and history of CAZES, which keeps its production and ageing techniques a carefully guarded secret. The famous Muscat de Rivesaltes, with its exotic and citrus fruit aromas, and the renowned old vintage Rivesaltes Aimé Cazes are both part of this exceptional range of wines that can be found in the most famous restaurants in the world. The Rivesaltes Ambré is aged in oak vats for 7 years to ensure correct oxidisation.


Vinification

Once harvested, the grapes are taken immediately to the winery. After racking, the alcoholic fermentation is temperature controlled at 18° and stopped during its liquid phase by adding neutral alcohol in mid-fermentation.


Maturation

15 years maturation in centenaryoak tuns. It evaporates at a rate of 7%, which leads to a great concentration of the wine. Once bottled, it is kept in air conditionned cellars.


Tasting Notes

Eye: Deep amber in color.

Nose: The nose is enriched by myriad aromas : smoky notes, toasted hazelnuts, dried apricots ...

Palate: On the palate, this complexity is enhanced by elegant fruit aromas : peach and candied pineapple.


Food Pairings

Served at 12°C. Half-cooked foie-gras, ginger or curry pork, cheeses (Cantal, Brie de Meaux), crème brûlée, dried fruits based tarts (almonds, hazelnuts, nuts).
