The famous Muscat de Rivesaltes, with its exotic and citrus fruit aromas, and the renowned old vintage Rivesaltes Aimé Cazes are both part of this exceptional range of wines that can be found in the most famous restaurants in the world. Often selected as one of the best 100 wines in the world, the vintage Aimé Cazes is a Rivesaltes Ambré of outstanding character, smooth and elegant, subtle and complex, the result of 30 years of ageing in oak vats. It is dedicated to Aime Cazes, one of the founders of Cazes estate.
The grapes are pressed immediately after being picked. After racking, the alcoholic fermentation takes place at 18°C and is stopped, while still in its liquid phase, by adding neutral alcohol.
22 years maturation in centenary oak tuns. It evaporates at a rate of 7% each year so more than 2/3rd of the total volume over the period. Once bottled, ot is kept in air conditionned cellars.
Eye: Deep amber in color.
Nose: The passing time has brought his creation to its ultimate conclusion : a wine enriched by a myriad of aromas : green nuts, Seville oranges, figs, dried apricots, cinnamon, nutmeg, cardamom...
Palate: …fragrances whose incredible length is emphasised by the fleshy, suave character of the wine.
To appreciate it fully, it should be drunk at a temperature of around 15°C, out of a large, airy glass, and preferably accompanying a dish of foie gras, a dessert with oriental flavours, or a classy cigar. This Special Vintage is a wine of sharing, a wine of communion.
